I’m back from my very special week at The Golden Door where I was invited to be the Guest Chef. It was an absolute dream come true and such an honor to work alongside Chef Greg and The Golden Door team.  It is my heaven on earth and the food there is just incredible. Back to business this week though! I have a live zoom for any and all online cooking class subscribers on Wednesday, January 31st at 12:00 pm PST.  This is an extra for online subscribers who want to ask me anything!  Here’s your dinner planner for the week:

Meatless Monday: Chipotle cauliflower tacos (My husband likes these with some warm chickpeas or black beans mixed with the cauliflower) with jicama slaw,  or you can serve a side of drunken beans

Tuesday: A simple slow-roasted salmon, method here, served over mixed greens tossed with miso-ginger dressing, Quinoa with Toasted Coconut and Lime 

Wednesday: Skillet pesto chicken and rice + some extra veggies – use what you have! Sauteed cabbage or spinach…roasted cauliflower or broccoli… sauteed mushrooms. Any veggie works with this entree. 

Thursday: Hearty vegetable soup with pesto (p. 96) from Kitchen Matters, pizza muffins also from Kitchen Matters but that recipe is also accessible here.  Add any of the leftovers from last night’s dinner (chicken and rice) to the soup and add enough stock to give it the consistency you want.

Friday: Kale salad with creamy lemon dressing served with grilled or roasted fish 

Saturday Brunch: Collard Wraps with Peanut Sauce – I’m doing mine this week with Chickpea “Tuna” Salad.

Sunday: Baked Asian Turkey Meatballs, black rice (aka forbidden rice) and Asian slaw.
