The holidays may be over but I love entertaining this time of year! Game Days, Valentines Day, and cozy dinners in are all my jam. I hosted a birthday luncheon for a good friend this week and it was a gluten-free and vegan menu (because she is GF and vegan) and wow! Meatless Monday: Kung Pao Cauliflower served over rice or quinoa (don’t forget to include the peanuts or cashews for a little protein – otherwise you can swap in some tofu for part of the cauliflower)
Tuesday: Fish tacos, chopped salad with Mexican dressing (lettuce, radishes, red cabbage, toasted pepitas) Broil the fish if you can’t grill.
Wednesday: Spaghetti squash with kale and chickpeas, sautéed mushrooms
Thursday: Zuppa Toscana (this is a soup that can definitely sub as a meal, but add a salad or grilled cheese if you need more.)
Friday: Moroccan sheet pan chicken p. 221 from QTQ served with couscous, cauliflower rice or steamed rice.
Saturday brunch: egg salad with grain-free seed crackers.
Sunday: Split pea and barley soup, easy pizzas with naan bread or Banza frozen chickpea pizza crusts
Here’s what you can do ahead if it helps you:
Sunday:
Cook rice or quinoa
Make salad dressing
Wash greens
Break cauliflower into florets
Make Kung Pao sauce
Monday:
Roast spaghetti squash
Wednesday:
Make stock, if using homemade
Thursday:
Season chicken for Moroccan sheet pan
Friday:
Make seed crackers if making from scratch
Cook hard-boiled eggs
