It’s Modernism Week in Palm Springs and I am back for the first time since 2020! We are staying in Palm Desert and you know Hubs bought all sorts of tickets to lectures and home tours. I’m here for the sunshine and relaxation!
Friends, I am in production right now for a brand-new bootcamp for new and beginner cooks, called Back-to-Basics. I took all your feedback + my experience as a cooking instructor for the last 14 years and I created an amazing course for you! Be on the lookout for sign-ups in the next week or so. I plan to launch the course the week of March 7th! Here’s your dinner planner for the week:
Meatless Monday: Creamy black bean soup, avocado toast (hmmm…now that there’s a shortage of avocados from Mexico, maybe not…) or sweet potato toast
Tuesday: Deconstructed Salmon Sushi Bowl (this is my family’s favorite dinner! Make it with any kind of fish or shrimp. Clean out the crisper drawer.)
Wednesday: Chicken and veggie fajitas (mushrooms, zucchini, bell peppers, and/or onions), Green goddess salad
Thursday: Broccoli, celery root and spinach soup from Kitchen Matters you can add cooked quinoa and white beans or chickpeas to make this a hearty meal or a grilled cheese or quesadilla.
Friday: Baked chicken with artichokes and capers, millet cauliflower mash
Saturday brunch: Roasted strawberry bruschetta with ricotta and grilled bread (this is so good and totally overlooked. Make it!)
Sunday: Veggie Stuffed Grilled Portobello Mushrooms p. 284 from Quicker than Quick, green salad with everyday salad dressing #1
Here’s what you can do in advance if it helps you:
Sunday:
Cook beans if making from scratch
Wash greens
Make salad dressing
Make rice vinegar and maple syrup mixture for sushi bowls
Tuesday:
Slice vegetables for fajitas
Thursday:
Break cauliflower into florets
Friday:
Wash and hull strawberries
