Happy August!! The new monthly cooking class is UP and it is called “The Best of Summer!” Here’s the menu: Fried Zucchini Blossoms, Grilled Bell Peppers with Burrata, Pine Nuts and Basil Vinaigrette, New England Cod Cakes, Roasted Poblano Corn Chowder, Spiced Peach Shortcakes.
If you are a monthly subscriber, go ahead and log in and watch the class on your own. You can purchase any class as a single if you don’t want to commit to a subscription! Look out for an email from me for when I am hosting live “office hours.” It’s your time to ask me whatever you like!
Here’s your dinner planner for the week:
Meatless Monday: lighter and easier eggplant parmesan, green salad with chickpeas
Tuesday: Stir fried ginger beef with shiitake mushrooms, cilantro-lime rice (stir-fries are fast and don’t require heating up the kitchen too much!)
Wednesday: Caramelized Summer Squash Chicken Skillet with Orzo from Ragan Wallake Kitchenette
Thursday: Solterito (Peruvian chopped salad), Grilled Shrimp from KM
Friday: Black bean mushroom burgers from Quicker than Quick, zucchini fries
Saturday brunch: avocado chocolate pudding topped with hemp seeds, berries and coconut flakes
Sunday: Grilled pizza, grilled romaine salads
Here’s what you can do in advance if it helps you:
Sunday:
Make tomato sauce for eggplant parmesan or use store-bought
Roast eggplant slices for eggplant parmesan
Monday:
Cook rice
Make marinade for beef stir fry
Thursday:
Assemble black bean burgers
Friday:
Make avocado chocolate pudding
Saturday:
Make caesar dressing
