Happy holiday weekend!ย Don’t you love it when a holiday falls on a Monday to give you an extra-long weekend?ย Love!ย I hope you have some fun plans and some time to relax.
I want you to be the one who brings the best food to all those barbecues this weekend! ย Check out my post from last year with some great menus for summer entertaining.ย There was also this 4th of July menu I did with Jenni Kayne a few years ago which I loved and this one which I just did this year which was also great.
Here is a fantasticย dinner planner to help get you organized for the week ahead:
Monday:ย 4TH OF JULY!!! (See links above for some ideas)
Tuesday: (Meatless Monday make-up): Tomato, Roasted Pepper and Basil Strata with leftover hamburger buns, green salad with everyday salad dressing #2
Wednesday:ย Fiesta salad with salsa vinaigrette, grilled steak or chicken or poached chicken
Thursday:ย simple baked halibut with lemon, quinoa tabbouleh
Friday:ย BBQ chicken with homemade BBQ sauce, cole slaw (I like baking chicken pieces smothered in BBQ sauce because it won’t burn like it does on the grill.)
Saturday lunch: Kale salad with creamy lemon dressing, savory muffins with roasted peppers and feta
Sunday:ย California Greek salad with grilled or sautรฉed shrimp, hummus
Here’s what you can do ahead if you need to:
Make salsa vinaigrette
Make quinoa for tabbouleh
Juice lemons for tabbouleh
Make BBQ sauce
Shred cabbage/grate carrots for coleslaw
Wash and prep kale leaves
Make creamy lemon dressing
Make croutons for kale salad (if using)
Make hummus
