Hello, dear readers! Forgive me for not posting a new recipe this week. I really needed a little break and wanted to be fully present with my family during the holidays. Plus, I hardly read anything that comes into my inbox between December 15th and January 3rd!
Everyone is talking about resolutions right now and I’ll be honest – I don’t really make any. I always try my best every day to be kind and compassionate, to push myself out of my comfort zone so I can learn and grow, to stay true to what I know is a healthful way to live, and just as important, I am fully committed to my calling which is to help others be as healthy as possible. As I have said many times, the first step towards good health is with good food, and you can’t achieve optimum health if you’re not cooking your own food. That’s why I started teaching cooking classes over 10 years ago and why I have expanded my reach with my online cooking classes. Meatless Monday: Kale and Soba salad with Miso Ginger Almond Dressing (I might add some baked tofu) from the Crunchy Radish
Tuesday: Greek Sheet Pan Chicken with Lemon and Potatoes (my mom made this for our first dinner in NY and I was reminded what a great recipe it is!) + something green like broccoli
Wednesday: Superfood Salad from my book with a side of Roasted Carrots with Garlic Yogurt.
Thursday: Chickpea Burgers with pita, avocado and yogurt-tahini sauce and a green salad with everyday salad dressing #2
Friday: Chicken Enchiladas Rojas and Mexican-Style Sautéed Greens
Saturday lunch: Black Bean and Sweet Potato Tostadas from Goop
Sunday: My favorite Thai Coconut Chicken Soup
Here’s what you can do ahead if it helps you:
Sunday:
Make all marinades, sauces and dressings
Wash and dry all veggies
Wednesday:
Make burger patties
Pre-make Chicken Enchiladas or just do the sauce and chicken
Make stock
Saturday:
Make Thai Coconut Chicken Soup
