I cannot believe that Christmas is about a week away! ย Yikes! ย I am both excited and overwhelmed. ย Excited to spend a week on Long Island with my family, overwhelmed because I don’t have all my holidays gifts ordered or granola for the teachers made. ย I will not leave the house this weekend until it is all done! ย Some administrative news:
- Check out the Prolon Fasting Mimicking Diet GIVEAWAY that I have going on one Instagram right now. ย The prizes are valued at $302!
- For my online cooking class students, the December class is UP! ย Click here to purchase the December class if you are not a subscriber. ย Click here to see all previous class offerings. ย Online classes make a great holiday gift. ย We’ll email the recipient a gift certificate from you!
- Friday, December 21 is the last day that I will be signing cookbooks at Pages in Manhattan Beach. ย Get your requests in pronto!
In the meantime, we’ve still got to eat. ย Here’s your dinner planner for the week:
Meatless Monday:ย Jeweled Riceย served with sautรฉed Swiss chard
Tuesday:ย Slow Cooker Whole Roast Chicken withย Maple Mustard Roasted Vegetables
Wednesday:ย Leftover chicken bowls with cooked quinoa (or grain of choice) garnished with shredded green cabbage, avocado, pickled red onion and a drizzle ofย ย Homemade Ranch Dressing (dairy-free and vegan adaptable).
Thursday: Chopped Thai Salad from What’s Gaby Cooking
Friday:ย Lentil Sloppy Joes from my book. If you want to omit the buns, serve it over cauli-rice, method here, or millet.
Saturday lunch: Fall Salad with Fig-Balsamic Vinaigrette and Quinoa Brittleย ย (I know this is kind of a fancy lunch, but I have been craving this salad! ย Omit the quinoa brittle and this is easy-peasy.)
Sunday:ย Rustic Butternut Squash Soup with Fennel and Wild Rice
Hereโs what you can do ahead if it helps you:
Sunday:ย
Jeweled Rice
Wash and prep veggiesย
Pickle onionsย
Make all marinades, sauces and dressings
Thursday:ย
Lentil base for Sloppy Joes
Quinoa Brittleย
Millet (if omitting buns and not using cauli-rice)
