My son (aka Mr. Picky) has been away for 4 weeks and I am going to pick him up this week. Â I cannot WAIT to see him!! Â I miss him and all his pickiness so much. Â I will not be following this dinner planner since I’ll be traveling, but I am starting to plan for the week I spend with my parents and my sisters and their families. Â I am very glad that I started taking notes the last few visits so I can remind myself what meals were great and which ones don’t need to be repeated. Â So excited!! Roasted Cauliflower with Almond-Herb Sauce Recipe
I just roasted cauliflower last night, in the middle of summer, and it was so delicious. Â I think I avoid roasting vegetables in the summer in favor of the grill or eating vegetables raw. Â But it’s hard to beat the ease and flavor of roasted vegetables, especially cauliflower which is a vegetable I eat all year round. Dinner Planner – Week of July 2, 2018
It’s great that July 4th falls in the middle of the week if your office gives you the whole week off.  But kind of a bummer if they don’t.  I’m in the latter camp since I’ll be shooting all week for Plant Lab and taking off just for July 4th.  No 3-day weekend for me!  I’m filming three vegan cooking courses for their online platform and they’ll be available by September.  And, I’m still continuing shooting my own online classes which you can access here. 🙂

Watermelon-Feta Bites Recipe

Who needs some simple summer bites that you can whip up with few ingredients on a moment’s notice for impromptu gatherings or hosting friends at home after a day at the beach? Â That would be me! Â It’s not too much to ask, right? My friends love coming to visit me at the beach in the summer and I love having them, but I also don’t want to be in the kitchen all the day. Â I love making these fun and festive (and healthy) watermelon skewers because they’re fresh and tasty, and they’re not heavy or too filling. Â I prefer a light bite before dinner. AH, the beginning of summer! Â I don’t really even have big plans this summer, but I am thrilled to have a more relaxed schedule. Â Most of all, no making school lunches!
