My son (aka Mr. Picky) has been away for 4 weeks and I am going to pick him up this week.  I cannot WAIT to see him!!  I miss him and all his pickiness so much.  I will not be following this dinner planner since I’ll be traveling, but I am starting to plan for the week I spend with my parents and my sisters and their families.  I am very glad that I started taking notes the last few visits so I can remind myself what meals were great and which ones don’t need to be repeated.  So excited!!  Here’s your dinner planner for the week:

Meatless Monday: Charlie Bird’s Farro Salad

TuesdayChipotle Shrimp Tacos with Pineapple Slaw from my book

Wednesday Roasted Cauliflower and Almond Herb Sauce over pasta of choice, basic tomato salad

ThursdayAsian Turkey Lettuce Cups, (+ roasted sweet potato wedges if you need more)

FridayCalifornia Greek Salad with served with grilled chicken, using this method (make extra for Saturday lunch)

Saturday Lunch Middle Eastern Rice Salad using leftover Grilled Chicken

Sunday: Roasted Salmon using this method with side of roasted broccoli and lemon using this method

 

Here’s what you can do ahead if you need to:

Sunday

Make farro

Make all dressings

Make all sauces

Dice pineapple

Make spice mixture for tacos

Slice cabbage

Wednesday

Cook rice

Wash lettuce
