Dinner Planner – Week of August 13th, 2018

Truth be told, I won’t be cooking at all next week.  My daughter is going back to college and my husband will be in charge of himself and Mr. Picky.  I am off to the Golden Door in San Marcos, California for a little self-care.  I will also be teaching one cooking class while I’m there because I can never stay out of the kitchen LOL.  Follow me along on my Instagram and you can see what I’m up to.  In the meantime, I know many of you like receiving this weekly dinner planner in your inbox on Saturday mornings because it encourages you to sit down and plan out your meals for the week.  Many families are already back to school, so no more olives and cheese for dinner them. Dinner Planner – Week of August 6th, 2018

I’ve had the best week on Long Island with my family, as usual.  Even though I love LA, East Coast summers are my favorite.  I’m heading back home and back to reality.  It’s time for me to get cracking on lots of work that I have allowed to pile up.  I’m not mad about it.  It means I allowed myself to have a vacation :).  Here’s your dinner planner for this week:

Dinner Planner – Week of July 30th, 2018

Many of you follow me on social media and know that I am on Long Island for my annual summer vacation at my parents’ house.  I put together a dinner planner for you guys per usual, but I’ll be cooking up some other recipes for all of us this week.  My sisters and I will cook together for 15 people on most days and even more people when we have other family members come for a visit.  Friday night I made chicken shawarma from my book with rice, tomato and cucumber salad, and pickled onions.  Really easy and a family favorite.  My niece helped me make 16 frozen chocolate-covered bananas which I’ll pull out when everyone wants a treat. Other things I’ll make that have been successful in the past are lunch boards, nachos, turkey meatloaf, a clam boil (coming to next month’s online cooking class), pizza night (my parents have a wood-burning pizza oven), pasta with pesto, loads of salads, baked salmon or cod, souvlaki skewers, chicken paillard with Greek salad, and lots of grilled veggies, to name a few.

Dinner Planner – Week of July 23rd, 2018

My son (aka Mr. Picky) has been away for 4 weeks and I am going to pick him up this week.  I cannot WAIT to see him!!  I miss him and all his pickiness so much.  I will not be following this dinner planner since I’ll be traveling, but I am starting to plan for the week I spend with my parents and my sisters and their families.  I am very glad that I started taking notes the last few visits so I can remind myself what meals were great and which ones don’t need to be repeated.  So excited!!  Here’s your dinner planner for the week:

Dinner Planner – Week of July 16th, 2018

I just roasted cauliflower last night, in the middle of summer, and it was so delicious.  I think I avoid roasting vegetables in the summer in favor of the grill or eating vegetables raw.  But it’s hard to beat the ease and flavor of roasted vegetables, especially cauliflower which is a vegetable I eat all year round. I might go out on a limb and say cauliflower is my favorite vegetable.Continue reading
