Many of you follow me on social media and know that I am on Long Island for my annual summer vacation at my parents’ house.  I put together a dinner planner for you guys per usual, but I’ll be cooking up some other recipes for all of us this week.  My sisters and I will cook together for 15 people on most days and even more people when we have other family members come for a visit.  Friday night I made chicken shawarma from my book with rice, tomato and cucumber salad, and pickled onions.  Really easy and a family favorite.  My niece helped me make 16 frozen chocolate-covered bananas which I’ll pull out when everyone wants a treat. Other things I’ll make that have been successful in the past are lunch boards, nachos, turkey meatloaf, a clam boil (coming to next month’s online cooking class), pizza night (my parents have a wood-burning pizza oven), pasta with pesto, loads of salads, baked salmon or cod, souvlaki skewers, chicken paillard with Greek salad, and lots of grilled veggies, to name a few.

Meatless Monday: Chopped Salad from my book , add chickpeas or hummus and pita on the side

Tuesday The Best Turkey Meatloaf recipe served with corn on the cob and tomato salad

WednesdayPasta Alla Checca , add optional mozzarella, served with a grilled vegetable platter (method here)

ThursdayGrilled Fish Tacos served with Cilantro Lime Slaw

FridayKorean Chicken Cauliflower Rice Bowl from Goop

Saturday Lunch: A no-work veggie, meat and cheese board from the market with a baguette on the side (see my Instagram post from Wednesday to get some ideas.)

Sunday: Marinated Tempeh using this method, with coconut rice and roasted or fresh veggies

Here’s what you can do ahead if you need to:

Sunday

Make all dressings

Make all marinades

Make corn on the cob and tomato salad

Prep cabbage for slaw

Make spice mixture for tacos

Saturday

Make coconut rice

Wash and prep veggies
