Meatless MondayWhite Bean and Farro Salad from Real Simple

TuesdayTurkey meatballs , an alternative pasta like lentil, Green Detox Salad

WednesdayDeconstructed Salmon Sushi Bowls (you can grill the salmon if you prefer.)

ThursdayPea and Mushroom Sauté with Mint, beef kebabs (I’m using this souvlaki recipe.)

FridayChicken Enchilada Rojas With Homemade Enchilada Sauce (You can also make this with mostly roasted or grilled vegetables.)

Saturday Lunch Quinoa Salad with Cherries, Almonds, Celery, and Pecorino from my cookbook with Strawberry Yerba Mate Popsicles.

Sunday: Shrimp with Tomatoes White Beans and Spinach, rice or garlic toast

 

Here’s what you can do ahead if you need to:

Sunday

Make farro

Make all dressings

Make the Turkey Meatball sauce

Make sushi bowl sauce

Shred red cabbage and carrot for Detox Salad

Make Strawberry Yerba Mate Popsicles

Tuesday

Cut mushrooms for Pea and Mushroom Sauté

Make Enchilada Sauce

Make quinoa for Quinoa Salad

Wednesday

Marinate meat
