I am at the end of my magical week at The Golden Door with my friend Melissa. We have been here three times together and we are already wondering when we can come back. This was a tough year for a lot of people. Do what you can to take some time for yourself even if it’s a hike in nature or 15 minutes of meditation. And check off something on your bucket list!

Meatless Monday: Eggplant meatballs on roasted spaghetti squash (see this recipe for how to roast spaghetti squash)
Tuesday: charred corn salad with tomatoes and avocado, Grilled Shrimp from KM
Wednesday: Mediterranean skillet chicken and rice, grilled zucchini
Thursday: roasted ratatouille, seared scallops p. 258 from QTQ
Friday: Slow cooker BBQ chicken sandwiches, coleslaw and sweet potato fries
Saturday brunch: Chickpea and Deconstructed Pesto Salad
Sunday: Tasty turkey burgers, zesty potato skewers, green salad with everyday salad dressing #2
Here’s what you can do in advance if it helps you:
Sunday:
Roast spaghetti squash
Assemble eggplant meatballs
Tuesday:
Marinate chicken for skillet chicken and rice
Wednesday:
Make ratatouille and reheat the next day
Thursday:
Cut sweet potatoes
Friday:
Cook chickpeas if making from scratch

What’s your go to olive oil
I use different ones. For everyday use, I like Thrive market private label olive oil, Costco olive oil in dark glass bottles, California olive ranch, O Organic. Try looking for an unrefined olive oil that comes in a dark glass bottle. The more expensive ones tend to have a stronger flavor and are best for finishing than for cooking.
