We have been having a fabulous time on Long Island and are staying through the holiday weekend!  For July 4th recipe ideas, please check last week’s dinner planner and my Instagram.  Stay safe and enjoy!!  Here’s your dinner planner for the week:

Meatless Monday: Got leftovers?  Saute chopped crudites for a stir-fry or frittata; freeze fruit for smoothies and slushies; use leftover hamburger and hot dog buns for a French toast casserole (see Kitchen Matters) or this Tomato, Roasted Pepper and Basil Strata, green salad with everyday salad dressing #2 (add leftover grilled veggies or crudites)

Tuesday: Shrimp and basil stir fry, black rice, grilled eggplant

Wednesday: Chili-sesame kelp noodles with veggies p. 163 from Quicker than Quick

Thursday: Mediterranean fish in parchment, zucchini and corn with jalapeño, feta and basil

Friday: Italian potato salad, whole roast chicken (slow cooker option here)

Saturday brunch: nectarine goat cheese salad, tomato, olive oil and salt on toasted ciabatta or other crusty bread

Sunday: Clamboil  (easier than it looks and SO MUCH FUN!)

Here’s what you can do ahead if it helps you:

Sunday:

Male salad dressing

Make shrimp marinade

Monday:

Cook black rice

Tuesday:

Prep veggies for kelp noodles

Thursday:

Cook potatoes and green beans
