My dear friends, it was not until I sat down to create this week’s dinner planner that I realized I never published a dinner planner LAST WEEK! In all the years I have done this, I have never actually completely forgotten to press “publish.” You know I was at my mother’s house last week with my sisters and their families and I was obviously lost in vacation mode and a digital detox. I profusely apologize!

Here’s your dinner planner for the week:
Meatless Monday: Roasted vegetable lasagne
Tuesday: tuna patties, salt and vinegar potatoes, green salad or my grilled eggplant with pomegranate molasses recipe featured on Style Sonata
Wednesday: grilled chicken with chimichurri sauce, roasted bell peppers with greek tomato salad p. 158 from Quicker than Quick
Thursday: Portobello and poblano tacos with charred corn p. 194 from Kitchen Matters, Mexican chopped salad
Friday: Balsamic grilled steak salad with peaches from delish, blistered shishito peppers
Saturday brunch: sweet potato toasts
Sunday: Grilled pizza, grilled romaine salads
Here’s what you can do ahead if it helps you:
Sunday
Wash greens and vegetables
Roast vegetables for lasagne
Make chimichurri sauce
Make salad dressings – caesar-ish dressing can be made later in the week
Toast pumpkin seeds for Mexican chopped salad
Saturday:
Make pizza dough
