Football is really the only professional sport I enjoy watching, so I am hoping for a great game on Sunday.  I will be rooting for LA, of course!  I am making a nice big crudites platter so that I don’t eat a thousand calories in chips and guacamole before I serve chili at halftime.  I’ve learned my lesson. For those of you in the Artic, yikes!  You’ve had a rough week.  I hope you are starting to thaw.  Make some warming soups with lots of ginger and spices, and don’t eat or drink anything cold.  You want to keep the body warm!  Here’s your dinner planner for the week:

 Monday: Super Bowl leftovers! I enjoy making  Chicken and Avocado Soup with them. Another suggestion is using leftover crudités in a salad or a soup, leftover salsa can be used in slow cooker chicken tacos, any leftover cooked/uncooked veggies in a frittata, method here, or quesadilla, method here.  Little tortilla chips are delicious sauteed with eggs and pico de gallo.  Chili can be served over baked potatoes or roasted sweet potatoes. Lastly, leftover corn tortillas are perfect in this easy tortilla soup.

Tuesday (Lunar New Year): The first meal of the Lunar New Year is generally cooked eggs. The yolk and egg white represent gold and silver. Here is an egg salad recipe along with other ways you can incorporate eggs into your dinner. You can also make vegetables fried rice with egg. My kids love the Asian Slaw with Asian Turkey Lettuce Cups. Easy Chinese Chicken is also great for a weeknght Though, traditionally serving a whole chicken or bird represents reunion and rebirth in the new year – here is my whole cooked chicken method ! Wednesday: Chickpea Socca with Mediterranean Salad , add your favorite protein if you’re extra hungry. You can also skip the feta if you want and drizzle tzatziki on top, method here

Thursday: Broiled Fillet of Sole with Lemon and White Wine from my cookbook and Fennel Salad with Citrus, Avocado and Ricotta Salata

Friday: Black Bean and Plantain Enchilada Bake from the Minimalist Baker

Saturday lunch: Breakfast Salad recipe with Potatoes, Bacon and Eggs

Sunday: French onion soup, onion-braised brisket, sauteed spinach or kale

Here’s what you can do ahead if it helps you:

Monday: 

Make all sauces, marinades and dressings

Wash all salad greens 

Wash and prep veggies 

Make rice

Make filling for the Asian Turkey Lettuce Cups 

Wednesday: 

Make enchiladas 

Make stock for soup (honestly, I buy Stock Options beef stock.  I don’t love making beef stock from scratch.)

Saturday:

Make brisket and refrigerate
