Newsletter subscribers, I’m hosting an in-person meet and greet on Saturday 9/17 at 9:00 am in Manhattan Beach. RSVP for the address! Here’s your dinner planner for the week:
Meatless Monday: Baked potato night with a great topping bar (vegan mac and cheese sauce, broccoli, salsa, black beans, sauteed onions are my favorites)
Tuesday: Skillet pesto chicken and rice, you can add anon-starchy vegetable of your choice or a green salad
Wednesday: Brown-Butter Miso Glazed Wild Salmon. I suggest roasting veggies on the same baking sheet using either asparagus or broccolini and drizzling it with olive oil and sea salt before roasting it in the oven and/or some sautéed mixed mushrooms with garlic.
Thursday: Harira (I often leave out the chicken and swap in a pound of cooked chickpeas.)
Friday: Easy Chinese Chicken served with a side of brown rice and steamed vegetables.
Saturday brunch: Kale, mushroom and brown rice bake (or use whatever leftover cooked vegetables you have)
Sunday: Oven baked gigantes beans with tomato, dill, and feta, with either a nice piece of fish or go vegetarian with some simple cauliflower steaks
Here’s what you can do in advance if it helps you:
Sunday:
Bake potatoes
Make cheese sauce
Make pesto
Make spice mix for chicken and rice
Wednesday:
Make stock if using homemade
Thursday:
Cook brown rice
Friday;
Cook beans
Sauté veggie mixture for brown rice bake
