I have had a hard time this week with the current events and decided to limit my social media and news-watching.  If I don’t respond to you on Instagram as quickly as possible, you know why!  This Monday’s newsletter will take the place of my normal “4 weeks before Thanksgiving” post I usually put on my site. And if you take my monthly online cooking class, the Thanksgiving class will be uploaded this week!!  In the meantime, Hubs and I are going to have a little getaway for my birthday (which was the other day) in Santa Barbara this weekend.  We’ll do our IG live on Monday from there as well!

Meatless Monday: Sweet Potato and Black Bean Tacos + Bell Pepper Jack o’ Lanterns (such a cute night before Halloween addition)

Tuesday (Halloween):Turkey chili (to make this plant based: swap out turkey for an equal weight of cooked beans or cooked lentils) + topping bar and cornbread and Roasted Stuffed Fondue Pumpkin

Wednesday: Sheet pan shrimp with broccoli p. 261 from QTQ , black rice or riced vegetable of your choice

Thursday: “Spaghetti and Verrry Tender Meatballs” by Hana Asbrink for Bon Appétit – you can swap the spaghetti for a GF or whole wheat noodle. Serve with a green side salad with my balsamic vinaigrette 

Friday: Mediterranean Fish in Parchment – tastes great over rice + some green beans for veg

Saturday Brunch: Savory muffins with spinach, roasted peppers and feta

Sunday: Roasted cauliflower steaks served with roasted Brussels sprouts, red onion, and grapes (good recipe for Thanksgiving, too!) , slow cooker chicken
