Hereโ€™s your dinner planner for the week:

Meatless Monday: Black Bean and Beet Burger, Asparagus salad with feta, walnuts and mint vinaigrette

Tuesday: Hawaiian Chicken Salad Bowl from Simple Roots Wellness  

Wednesday: Grilled chicken paillard with arugula and lemon vinaigrette + Crispy Roasted Truffle Potatoesย 

Thursday: Turkey Meatballs served over One Pot Farro Primaveraย , sautรฉed kaleย 

Friday:ย  Citrus poached wild salmon with cucumber-yogurt sauce + sautรฉed snap peas and radishes

Saturday brunch: any of these would be a great start to St. Pattyโ€™s Day –ย  St. Pattyโ€™s Day Green Pancakes, St. Patrickโ€™s Day Green Breakfast Cookies, Green Muffins + yogurt with fruit, Irish Soda Bread, Irish Soda Bread Muffins, Shamrock Shake

Sunday: Deconstructed Stuffed Cabbage Casserole + cauliflower mashed potatoes
