This weekโ€™s dinner planner includes light, seasonal dishes perfect for warm evenings and casual gatherings. Weโ€™re making a festive menu thatโ€™s perfect for the 4th and all season long: Grilled Chicken with Smoky Strawberry BBQ Sauce, Nectarine and Cucumber Crunch Salad, a stunning Savory Galette with Ricotta, Zucchini, Corn and Hot Honey, Zippy Potato Salad, and a Summer Berry “Tiramisu” to finish. Here’s your dinner planner for the week:

Meatless Monday: Easy Salmorejo Recipe (Spanish Cold Tomato Soup) + Cheesy Pull Apart Bread (or crusty bread or grilled cheese) 

Tuesday: simple grilled salmon + Charred Eggplant Salad or Fennel Salad with Citrus, Avocado and Ricotta Salata

Wednesday Brunch: Pancake Trifle

Thursday: Vegan Spinach & Artichoke Casserole with White Beans From My Bowl

Friday (4th of July): Here are some July 4th menu ideas. I also have the most fabulous American Flag pie โ€“ it is a must-make!  Sโ€™mores Bars or this Sโ€™mores Ice Cream Cakeโ€“ BEYOND! If you need something fun, but simple and easy, try the flag cookie, a fruit crisp with blueberries and cherries, or my new recipe Mixed Berry Crumble Pie with Easy Press-in Crust

Saturday: Consider using leftover hamburger or hot dog buns for a Tomato, Roasted Pepper and Basil Strata with leftover hamburger buns, green salad with everyday salad dressing #2. Many kinds of leftovers like grilled vegetables or crudites (just saute them first) work well in salads, pastas, casseroles, or frittatas. Just know that vegetables should be cooked before adding to pasta or frittatas.

Sunday: Clamboil (easier than it looks and SO MUCH FUN!) + grilled zucchini & summer squash
