Itโs a special weekend over hereโtwo of my kids and one future son-in-law are coming into town, and Iโm soaking up every minute of family time. Iโm hoping to do a fun, casual family Instagram Live on Monday, so stay tuned for that! And mark your calendars: my brand new August cooking class drops on August 1st. As always, this weekโs dinner planner is filled with seasonal, delicious meals to keep things easy and nourishing.
Here’s your dinner planner for the week:
Meatless Monday: Quinoa Kale Salad with Blueberries and Feta from The Real Food Dietitians + Crispy Baked Tofu
Tuesday: Corn cakes with avocado salsa + grilled shrimp (with a squeeze of lime, paprika, garlic)
Wednesday: The BEST La Scala Chopped Salad + Eggplant caprese
Thursday: arugula and farro salad with peaches served with grilled or rotisserie chicken + Lemon Crinkle Cookies
Friday: Citrus poached salmon + Corn and edamame succotash
Saturday brunch: Acai Bowl with your favorite toppings (think: granola, coconut flakes, nut butter, chia or hemp seeds. Hubs has been adding a scoop of protein powder lately and we love it!)
Sunday: Pasta con le sarde, grilled squash salad
