Itโ€™s a special weekend over hereโ€”two of my kids and one future son-in-law are coming into town, and Iโ€™m soaking up every minute of family time. Iโ€™m hoping to do a fun, casual family Instagram Live on Monday, so stay tuned for that! And mark your calendars: my brand new August cooking class drops on August 1st. As always, this weekโ€™s dinner planner is filled with seasonal, delicious meals to keep things easy and nourishing.

Here’s your dinner planner for the week:

Meatless Monday: Quinoa Kale Salad with Blueberries and Feta from The Real Food Dietitians + Crispy Baked Tofu

Tuesday: Corn cakes with avocado salsa + grilled shrimp (with a squeeze of lime, paprika, garlic)  

Wednesday: The BEST La Scala Chopped Salad + Eggplant caprese

Thursday: arugula and farro salad with peaches served with grilled or rotisserie chicken + Lemon Crinkle Cookies

Friday: Citrus poached salmon + Corn and edamame succotash

Saturday brunch: Acai Bowl with your favorite toppings (think: granola, coconut flakes, nut butter, chia or hemp seeds. Hubs has been adding a scoop of protein powder lately and we love it!)

Sunday: Pasta con le sarde, grilled squash salad
