Hi Friends!  I am in Bakers Bay in the Bahamas helping my friend put together her house that was damaged during the hurricane.  It is a quick trip but I am enjoying the change of scenery and it is so beautiful here.  Plus, it’s nice to indulge in some warm weather before we head to Long Island for Christmas!  Stand by for a new round of bootcamps coming in January.  Signups open on December 20th!!  Here’s your diner planner for the week:

Meatless Monday: Kale and white bean minestrone, cauliflower fritters a great alternative to latkes for a change of pace)

Tuesday: the best turkey meatloaf, crispy salt and vinegar potatoes, Brussels sprout slaw p. 63 from Quicker than Quick

Wednesday: Chinese chicken salad p. 64 from Quicker Than Quick (there is NOBODY who doesn’t think this is the best Chinese Chicken Salad dressing on the planet!!)

Thursday: Butternut squash lasagne

Friday: Stovetop braised parsnips with coconut butter and white balsamic, simple roast chicken or fish with chermoula,

Saturday brunch: gingerbread pancakes

Sunday: Roasted vegetable and black bean enchiladas verdes, Mexican sauteed greens

 

Here’s what you can do ahead if it helps you: 

Sunday: 

Wash greens

Make salad dressing

Make stock

Chop vegetables for soup

Cook white beans if making from scratch

Monday: 

Make meatloaf mixture

Shred brussels sprouts for slaw

Tuesday: 

Poach chicken or use store bought rotisserie chicken

Wednesday: 

Cook vegetables for lasagne and assemble

Friday: 

Make pancake batter
