I just had the best week with both of my daughters home and my future son-in-law visiting. I love having them here—they fill the house with energy and they make the best taste-testers! This week’s dinner plan includes a few hits we made together and some easy, summery meals to carry us into August. Speaking of August, the new cooking class just dropped and it’s a good one—perfect for the tail end of summer and early fall gatherings.

Here’s what’s on the menu this month:
Grilled Halloumi & Peach Panzanella, Grilled Whole Fish with Herbed Green Goddess Salsa Verde, Peach Oat Crumble Bars, Roasted Lemon Farro with Fennel and Cherries, Watermelon-Tomato Gazpacho with Herb Oil Drizzle

Here’s your dinner planner for the week:

Meatless Monday: Chickpea Burger + raw zucchini salad from Kitchen Matters

Tuesday: Stir fried ginger beef with shiitake mushrooms, cilantro-lime rice (stir-fries are fast and don’t require heating up the kitchen too much!)

Wednesday: Seared Tuna Steak + Peach Salad with Chili and Lime 

Thursday: Gochujang Chicken Burgers with Kimchi Bacon Jam from Pinch of Yum (You can sub for turkey bacon if you’d like), roasted sweet potato fries, Blistered Green Beans (I know I posted these in a recent dinner planner but I am making them once a week!) + Strawberry-Ginger Shrub

Friday: Branzino Fillets with Green Olive and Fennel Tapenade + Grilled Veggie Lentil Salad with Lemon Dill Dressing  

Saturday brunch: Baked Cinnamon Cake Doughnuts + yogurt with fresh berries 

Sunday: Summer garden frittata, Caprese salad, mixed greens with everyday salad dressing #2
