We just moved Mr. Picky into his first off-campus house and WHOA! it was a lot of work.  The boys were starting from nothing, but they were very organized about setting up the common areas (especially the kitchen) with the help of the moms, of course!  If you take my monthly online cooking class, look out for the September class later this week.  It’s all about healthy family dinners!  I will also hold live “office hours” on Wednesday 8/30 at noon PST if you need help with anything or want to just hang out.  🙂 Here’s your dinner planner for the week:

Meatless Monday: Gazpacho with avocado, salad or kale chips, pizza muffins from my book

Tuesday: Korean beef sesame noodles from half baked harvest, sauteed green beans

Wednesday: Moroccan sheet pan chicken from QTQ, served with sautéed cauliflower rice or couscous

Thursday: Smoky braised lentils with or without turkey sausages, roasted broccolini – use this method

Friday: Spetses braised cod, fresh green salad or roasted vegetable tian

Saturday brunch: Hatch chile spinach dip with tortilla chips

Sunday: Slow cooker BBQ chicken sandwiches, coleslaw and sweet potato fries

 

Here’s what you can do ahead if it helps you: 

Sunday: 

Make gazpacho 

Wash greens

Measure spice mix for Moroccan sheet pan

Make stir fry sauce 

Tuesday: 

Season chicken for sheet pan

Wednesday: 

Cook lentils 

Thursday: 

Assemble and bake vegetable tian, if serving 

Slice onion and fennel for spetses braised cod

Friday: 

Assemble hatch chile dip, refrigerate and bake on Saturday
