I hope you are enjoying the last bits of summer!  I know some kids are already back in school and lots of kids are heading back to college.  So much transition is in the air! We had a lovely week on Long Island but now it’s time to bring Mr. Picky back to college.  It’s always a bittersweet time. Here’s your dinner planner for the week: 

Meatless Monday: Panzanella with chickpeas, tomato vinaigrette and parmesan croutons (this is a light meal which contains protein, but if you need more, you can add additional food like the zucchini-leek soup from QTQ or a snack board with olives, cheese and nuts.

Tuesday: Grilled fish tacos or chipotle cauliflower tacos, Mexican corn off the cob, cilantro-lime slaw

Wednesday: veggie stuffed grilled portobello mushrooms from QTQ

Thursday: Sheet pan chicken with a side of fresh greens tossed with my Everyday salad dressing 

Friday: Summer Squash and Basil Pasta from Healthyish (this would be great with shrimp!)

Saturday brunch: Green shakshuka with fresh bread, fresh fruit

Sunday: quinoa salad with cherries, almonds, celery and pecorino, with grilled chicken – use this method

 

Here’s what you can do ahead if it helps you: 

Sunday: 

Make parmesan croutons and tomato dressing for panzanella

Measure seasoning for tacos

Measure seasoning for sheet pan chicken

Make everyday salad dressing

Monday: 

Grate cabbage and carrot for slaw

Tuesday: 

Make filling for portobello mushrooms

Friday: 

Cook quinoa

Chop vegetables for shakshuka
