People, I am toast.  Excited, thrilled, elated, but I need the weekend for some serious downtime.  I just spent the last 9 days straight shooting my entire next cookbook.  It is going to be fabulous and I know you are going to absolutely love it.  I can’t divulge the theme or much else, but know that I am putting everything I have into creating an incredible resource for you, so that you can be the best cook you can be.  We have to wait until 2020, but it will be worth it!  For my online cooking class students, I hope you saw the announcement on our private Facebook page that this month’s class is up and ready for you.

In the meantime, here’s your dinner planner for the week.  I hope you can glean some inspiration and motivation to do a little planning in advance.  If you write it down, it’s more likely to happen!

Meatless Monday: shirataki noodle stir-fry; try this recipe and use this method for preparing the shirataki noodles (but really you can treat them like pasta and add whatever you want)

Tuesday: wild halibut in parchment with ginger and cilantro, steamed black rice (my new obsession), broccoli with garlic and chilis (blanche broccoli, drain and saute with lots of chopped garlic and chili flakes + salt and pepper)

Wednesday: curried lentil and tomato soup from Bon Appetit (I love this and have made it several times.)

Thursday: lemon-thyme chicken, stovetop brussels sprouts from my cookbook (see this video if you don’t have my book – but I have to ask, why do you not have my book??  It’s only $15 on amazon right now and you will learn so much and use it all the time.  Just saying!), roasted delicata squash rings (400 degrees, olive oil or coconut oil, salt and pepper, rosemary if you have it, 30 minutes)

Friday:  pasta or spaghetti squash with vegan bolognese, green salad with seasonal vegetables and every day salad dressing #1 or 2

Saturday lunch: chickpea “tuna” salad, lettuce leaves, crackers or pita

Sunday: whole roasted chicken with fennel, carrots, onions, potatoes

Here’s what you can do ahead of time if you need to:

Sunday

Make all dressings

Make stock

Wash salad greens and herbs

Prep broccoli

Prep veggies for Monday’s stir-fry

Thursday

Make chickpea tuna salad

Friday or Saturday

Salt the whole chicken for roasting on Sunday

Prep veggies for chicken
