Happy Spring!  This is a wonderful time of year.  It is Nature’s New Year, a fresh start, a rebirth, a time to clean the slate (and everything else.)  If 2019 didn’t get off to a good start, now’s the time to set new intentions.  The universe is listening.  🙂

For my friends in Orange County and Los Angeles, I will be returning to Roger’s Gardens this Sunday, March 24th from 11:00 am to 12:00 pm for a book signing since there were not enough books last week when I was there.  Hubs is coming with me, so if you’ve always wanted to meet the mister, now’s your chance!  You can also call Rogers Gardens and pre-order a book and tell them how you want me to sign it and pick it up another time.

Here’s your transition-to-spring menu for the week:

Meatless Monday: Turmeric Rice Bowls 

Tuesday: Wild Halibut with Thai Coconut Sauce served with cooked rice and sautéed greens

Wednesday: Moroccan Vegetable Soup ,the chickpeas and sweet potato offer plenty of protein and fiber but if you want to sub grains (brown rice, millet, freekeh or quinoa would all work) for the cauliflower rice, you absolutely can.  The easiest thing to do would be to cook the grains separately and add them at the end or to each individual bowl, otherwise you will have to adjust the liquid measurement for the soup (grains absorb liquid).

Thursday: 5-minute Green Goddess Salad from Mind Body Green, with poached chicken or jarred tuna in olive oil (this is a great way to use up leftovers and odds and ends)

Friday: Wild Salmon Burgers , chipotle sweet potato fries, green salad with one of my Everyday Salad Dressings

Saturday Lunch: Migas (Egg and Corn Tortilla Scramble) from my book and Creamy Cabbage and Avocado Slaw 

Sunday: Spring Green Pasta with Asparagus and Peas, Greek lamb chops with yogurt-mint sauce by Ina Garten

 

Here’s what you can do ahead if it helps you:

Sunday:   

Cook all grains 

Make all dressings, sauces, marinades 

Make stock for soup

Tuesday:

Make Moroccan soup or prep all veggies for soup

Saturday:   

marinate lamb chops

make yogurt sauce
