I have some exciting news!  I have always wanted to take my cooking instruction online since I am so limited as to how many people I can teach in person on a daily basis. So I am thrilled to have partnered with Clean Eating Magazine and Vegetarian Times to offer a 7 week (6 week for Vegetarian Times followers) course on BATCH COOKING which starts on September 11th!

You don’t need to spend more time in the kitchen to create a satisfying dinner—you just need to cook smarter. In my new Clean Eating Academy course, I am going to teach you how to easily prepare an entire week of meals in a single day.  This is a life-changing series of classes that will teach you innovative make-ahead recipes with in-depth lessons on planning and cooking. It’s batch cooking at its best, and it’s going to revolutionize the way you cook forever.

You all know how I rely on being organized for the week ahead with respect to planning out my meals and doing a little meal prep.  It’s only way I would be able to feed my family without stress!  In this course I am sharing all my tried and true secrets!  Here’s a peek at the course syllabus:

Week 5: Become Friends with Your Freezer/What can and can’t be frozen

Week 6:  Getting Creative: Tackling Tough Ingredients and Mastering Shortcut Recipe

  • How to slice and prep fresh ginger, fresh turmeric, fresh pineapple, winter squashes and kale.
  • Kitchen hacks for onion and leek prep.
  • Customizable quick and easy recipes to minimize food waste and clean out your fridge including not-fried rice, pastas, soups and frittatas.

Week 7: Proteins, Explained: Poultry, Meat and Fish (for Clean Eating signups, not Vegetarian Times)

  • How to select top-quality proteins
  • How to refrigerate and freeze proteins for freshness and food safety
  • Best cooking techniques for batch cooking poultry, meat and fish including searing, roasting, braising, stewing and more

Dinner Planner: Week of August 14th, 2017

I am en route from New York to LA and although I had an amazing three weeks (two of which were pure vacation), I am looking forward to unpacking and sleeping in my own bed tonight.  There’s no place like home.  I have a few meetings, one class and a lot of laundry to do in the next few days before I turn around and go back to NY on Wednesday!  Tune into the Today Show on Friday morning when I’ll be doing a back-to-school (YIKES!) segment.  Food segments are almost always between 8:30 and 9:00 am.

Then I’m off to Dallas for the weekend where I’ll be recording a podcast with the lovely Belbel sisters of A Double Dose blog and doing a book event at The Gem on Monday, August 21st at 10:00 am! See my Events page for details.

On Wednesday, I’ll be in Houston for a live segment on KHOU-TV Channel 11 on “Great Day Houston” and then a book party hosted by my dear friends Maria Kasselakis and Marcia Smart (her fantastic blog is Smart in the Kitchen.)  I am so excited to meet everyone in Dallas and Houston!

Dinner Planner: Week of August 7th, 2017

My time with my family is coming to an end.  But my older daughter’s arrived from Dallas and I could not be more excited!!  We’ll all be together at my parents’ house for a blip before my husband and I take our kids on a quick family getaway to Shelter Island.  I am already praying for no rain!  You may have followed my Instagram to see all the meals my sisters and I prepared for the crew this week.  Feel free to message me on social media or leave a comment here if you need any tips about cooking for crowd!

Dinner Planner: Week of July 31st

Dinner Planner: Week of July 24th

I have landed on Long Island for the next three weeks with little trips into NYC and Westchester for some book-related meetings, signings and cooking demos. Check my Events page for updates, including a new one in Armonk, NY at DeCicco & Sons Market on Thursday, July 27th.  But tonight, I’m off to my ##th high school reunion in my hometown.  I haven’t seen most of these people since the last one 10 years ago and some not since graduation (and as you can see, I’m not giving up that number. Dinner Planner – Week of July 17th, 2017

I had a great shoot last week with Clean Eating Magazine.  I can’t wait to share with you more about the online batch cooking course I developed for them!  I also had a fantastic book signing at Jenni Kayne’s store in Newport.  It was really fun to meet so many people and talk about healthy cooking!

Five Friday Favorites: July 14th, 2017

Mae Ploy Yellow Curry Paste

If you have my new cookbook, you may have come across a recipe for a quick vegetable curry that calls for yellow curry paste.  When developing that recipe, I searched high and low for a really fantastic, authentic, and clean Thai yellow curry paste, which led me to this Mae Ploy yellow curry paste that I am just crazy about.  There are many different kinds of Thai curry pastes and yellow is my favorite.   There’s so much flavor from garlic, shallots, ginger and lemongrass.  I love having this in the fridge for a last minute punch of flavor.  It would take a lot of time and a lot of random ingredients to make the same paste from scratch.  It is a little spicy, but you don’t have to use a lot.  It is available on Amazon with free prime shipping!
