Monday (New Year’s Day): We always made lentils on New Year’s Day for good luck. I usually continue this tradition with a big pot of lentil soup, but the Lentil Shepherd’s Pie (which we now make every year on Christmas) is outstanding.
Tuesday: Big green detox salad with Bieler’s Broth or Super Greens soup I never do a “cleanse” or a “detox” because I don’t believe in them, but I often crave a light meal, soup, and/or fresh greens to break the cycle of rich holiday food.
Wednesday: One Pan Chicken and Farro with Butternut Squash, Chickpeas, and Dates from Amanda Frederickson, sauteed spinach
Thursday: Lasagne Soup this is enough for us, but you can add a green salad or garlic bread if you need more.
Friday: Shrimp and basil stir fry, roasted veggies, served with steamed white or brown rice or a riced veggie like cauliflower or broccoli stems
Saturday Brunch: avocado toast served with sliced oranges
Sunday: Chicken posole verde with radish, cabbage and avocado garnishes (My son likes tortilla chips. We are fine eating just this, but a quesadilla or salad is a nice accompaniment if you need something more.)
