I understand a lot of people are taking Monday off and turning this into a 4-day weekend!  I hope you all enjoy some quality time this week.  If you are hosting any get-togethers or going to a potluck and you have to bring something, I’ve got you covered.  Check out some of the links below.

The theme of my new July cooking class is Coastal Italian! If you are like me and you are not going to Italy this summer like everyone else we follow on Instagram lol, then this class will give you a taste of a vacanza in Italia!  Here’s your dinner planner for the week:

 

Meatless Monday: Pea and Mushroom Sauté with Mint, Summer garden frittata

Tuesday (4th of July): Here are some July 4th menu ideas. I also have the most fabulous American Flag pie – it is a must-make! Or S’mores Bars or this S’mores Ice Cream Cake– BEYOND! If you need something fun, but simple and easy, try the flag cookie or a fruit crisp with blueberries and cherries.

Wednesday: Consider using leftover hamburger or hot dog buns in a baked French toast casserole or Tomato, Roasted Pepper and Basil Strata with leftover hamburger buns, green salad with everyday salad dressing #2. Many kinds of leftovers like grilled vegetables or crudites (just saute them first) work well in salads, pastas, casseroles, or frittatas. Just know that vegetables should be cooked before adding to pasta or frittatas.

Thursday: Crispy Sheet Pan Gnocchi and Veggies from The Kitchn

Friday: Poached salmon, zesty potato skewers, sautéed green beans (I like to blanch the beans in salted water for 3 minutes, drain, shock in ice water, drain, pat dry and saute with shallots, salt and pepper and a squeeze of lemon or lemon zest.) 

Saturday brunchSocca with Mediterranean toppings

Sunday: Clamboil  (easier than it looks and SO MUCH FUN!)

 

Here’s what you can do in advance if it helps you: 

Sunday: 

Clean and slice mushrooms 

You can make the frittata today and reheat tomorrow 

Make salad dressing

Wash greens

Monday: 

Make flag pie. You can make desserts you plan to serve for 4th of July

You can cut vegetables for roasting/grilling, make marinades, or sauces for tomorrow

Tuesday night: 

You can assemble french toast casserole or a strata using leftover bread and refrigerate to bake on Wednesday

Thursday: 

Make mustard dressing for potato skewers

Friday: 

Make socca batter and refrigerate
