I cannot believe that Christmas is about a week away! Yikes! I am both excited and overwhelmed. Excited to spend a week on Long Island with my family, overwhelmed because I don’t have all my holidays gifts ordered or granola for the teachers made. I will not leave the house this weekend until it is all done! Some administrative news:

- Friday, December 21 is the last day that I will be signing cookbooks at Pages in Manhattan Beach. Get your requests in pronto!
In the meantime, we’ve still got to eat. Here’s your dinner planner for the week:
Meatless Monday: Jeweled Rice served with sautéed Swiss chard
Tuesday: Slow Cooker Whole Roast Chicken with Maple Mustard Roasted Vegetables
Wednesday: Leftover chicken bowls with cooked quinoa (or grain of choice) garnished with shredded green cabbage, avocado, pickled red onion and a drizzle of Homemade Ranch Dressing (dairy-free and vegan adaptable).
Thursday: Chopped Thai Salad from What’s Gaby Cooking
Friday: Lentil Sloppy Joes from my book. If you want to omit the buns, serve it over cauli-rice, method here, or millet.
Saturday lunch: Fall Salad with Fig-Balsamic Vinaigrette and Quinoa Brittle (I know this is kind of a fancy lunch, but I have been craving this salad! Omit the quinoa brittle and this is easy-peasy.)
Sunday: Rustic Butternut Squash Soup with Fennel and Wild Rice
Here’s what you can do ahead if it helps you:
Sunday:
Jeweled Rice
Wash and prep veggies
Pickle onions
Make all marinades, sauces and dressings
Thursday:
Lentil base for Sloppy Joes
Quinoa Brittle
Millet (if omitting buns and not using cauli-rice)
