Besides being back-to-school it is also back-to-football season! We love watching a game or two on Sundays. I always make a pot of soup or chili which can sit in a slow cooker on warm for a few hours and everyone can help themselves. Here is a great dinner planner for the week!
Monday: Roasted vegetables enchiladas verde
Tuesday: Spaghetti squash with herbs and pecorino, chicken kebobs with chimichurri
Wednesday: Grilled wild salmon with fennel and dill butter from the Yummy Supper Cookbook
Thursday: Turkey tacos, rice and black beans, tortilla or large lettuce leaves, salsa and guacamole
Friday: Green goddess salad with grilled shrimp or chicken
Saturday lunch: Spinach and quinoa salad with feta and dill
Sunday: Late summer minestrone, pizza quesadillas
Here is what you can do ahead if you need to:
Sunday
Make enchilada sauce
Chop and roast veggies for enchiladas and refrigerate
Roast and strand spaghetti squash
Make chimichurri sauce
Make dill butter for grilled salmon
Make spice mix for tacos
Make black beans for tacos if making from scratch
Make homemade chicken or vegetable stock for soup
Friday
Make quinoa for salad
Make green goddess dressing
Wash lettuce for salad
