The piรฑa colada has always been my favorite vacation drinkโ€”tropical, creamy, and sweetโ€”but this smoothie version takes it to the next level with wholesome ingredients but without the added sugar. Inspired by my friend Catherine McCordโ€™s Smoothie Project, this recipe was an instant hit with my son, who loves the pineapple and coconut combination despite being a bit picky. 

Unlike traditional versions with cream of coconut and syrups, this easy smoothie recipe includes frozen cauliflower for sneaky nutrition and a luscious texture. Customizable and family-friendly, itโ€™s perfect for adding protein powder, a sprinkle of granola on top, or served as a parfait or smoothie bowl.   • 1/2 fresh or frozen banana, peeled
  • 1/2 cup 80 g fresh or frozen pineapple chunks
  • 1/4 cup 33 g frozen cauliflower florets (this adds creaminess and NO flavor, I promise)
  • 3/4 cup 180 ml coconut milk or milk of choice
  • 1 Tablespoon hemp seeds
  • 1 serving collagen peptides
  • 1 handful of ice

    Will one taste the cauliflower if I use fresh versus frozen?

    This is SO tasty! I can confirm the cauliflower is undetectable. This was pineapple-y enough even with 70 grams of fruit for those being extra carb-conscious. I wear a continuous glucose monitor and saw a very minimal rise in my glucose levels which was AWESOME!
