Bar mitzvah weekend is under way over here and I barely have time to talk to you today. Hope you’re doing well! I am having the best time with my family and friends and Mr. Picky has definitely risen to the occasion. Ok, let’s get organized for dinners this week!
Meatless Monday: Lentil soup served over quinoa instead of rice, avocado toasts
Tuesday: Baked parmesan chicken cutlets, sautéed garlic spinach, pasta
Wednesday: Deconstructed fish taco salad. Used the rub from my fish taco recipe on wild halibut plus grilled peppers, avocado, rice and beans
Thursday: Steak Skewers with scallion dipping sauce, mixed greens with sesame dressing
Friday: Kale salad with citrus dressing and radish, avocado, jicama and grilled chicken
Saturday lunch: white bean, celery and (optional) tuna salad
Sunday: Baked Asian turkey meatballs, cilantro lime slaw (I’m going to add a spoonful of vegenaise and a squirt of sriracha), lettuce leaves to make “tacos”
What you can do ahead if you need to:
Sunday
make stock for soup
Make dry rub for fish tacos
Make dressing for fish taco salad
Wash greens for salads
Make sesame dressing
Thursday
Prep kale
Make citrus dressing
cook white beans for salad unless using canned
Saturday
Make turkey mixture for meatballs
Shred cabbage for slaw
Wash lettuce leaves
