My heart is heavy.  The past week has been more than difficult to comprehend and I fear there will be less peace instead of more, at least in the near future. I am en route to Paris for a solo trip to visit a few friends and then take a tour of the Staub Factory outside of Paris, which has always been on my bucket list.  Feel free to follow along on Instagram if you’re looking for a distraction. Stay safe. Check in on your friends and loved ones who may feel anxious and alone right now. I am very proud of my community and I appreciate and love you. 

Meatless Monday: Vegan Mushroom Bolognese (eat this over your favorite pasta or spaghetti squash and add cooked lentils for protein)

Tuesday: Miso glazed black cod, sauteed shiitake mushrooms with garlic, black rice

Wednesday: Baked “Fried” Chicken sandwiches with all of your favorite toppings. I love mine with avocado, pickled onion, lettuce and my Copycat Chik-Fil-A Sauce (on the recipe under “tips”) Or chop the chicken into a bowl or lettuce wrap.

Thursday: Roasted Salmon Tacos by Ina Garten , cilantro-lime slaw

Friday: Farro Salad with Fennel and Roasted Butternut Squash, top with roasted chicken or feta to add some extra protein and make it a complete meal.

Saturday Brunch: Savory oats with kale, mushrooms and walnuts, add a poached egg if you want more protein.

Sunday: Chicken or Turkey Tortilla Soup is a delicious comfort meal before the start of the week – it’s all about the topping bar!  Serve guacamole and chips or a quesadilla if you need more.
