In advance of Mother’s Day, Happy Mother’s Day to anyone who is a mother or mother-to-be! If you are missing your mom this weekend, I am holding space in my heart for you. I know how hard it is to lose a parent. If you need to nudge your loved ones to make you something special, check out last week’s dinner planner for some lovely and healthy-ish brunch ideas. For my monthly online cooking class students, your May class was uploaded this week. It is a breakfast/brunch theme! If you want to join my fabulous cooking class community, we’d love to have you and I would love to help you be a better and healthier cook! Here’s your dinner planner for the week:
Meatless Monday: one pot farro with cauliflower and golden raisins, miso roasted eggplant
Tuesday: Shrimp and mixed vegetables with coconut-basil sauce, brown rice
Wednesday: Baked chicken with tomatoes, olives and capers (I’m going to stir in some spinach at the end), roasted smashed potatoes
Thursday: Branzino with green olive and fennel tapenade, grilled asparagus
Friday: Sesame Noodle Salad from WhatsGabyCooking, for protein add blanched shelled edamame, hard boiled egg, rotisserie or poached chicken.
Saturday brunch: cherry cacao açaí bowl
Sunday: Chicken Shawarma p. 188 from KM, with accompaniments (lavash or cauliflower rice, lettuce, tomato, cucumber, olives, tahini, yogurt). I have also used the spice mixture + 1 tsp garlic powder and 2 Tbs. olive oil on cauliflower florets and done a roasted cauliflower shawarma!
Here’s what you can do ahead of time if it helps you:
Sunday:
Cook brown rice
Break cauliflower into florets (you can make the farro dish now and reheat tomorrow)
Monday:
Cut vegetables for shrimp
Tuesday:
Cook potatoes
Wednesday:
Make olive and fennel tapenade
Saturday:
Marinate chicken for shawarma
