I hope everyone has a lovely Motherโ€™s Day this weekendโ€”whether you’re being celebrated, celebrating someone else, or simply taking time to rest. I also want to acknowledge that this day can be incredibly hard for those whose mothers are no longer with them. Iโ€™m holding space in my heart for you. If youโ€™re still looking for inspiration for Motherโ€™s Day meals or gatherings, last weekโ€™s dinner planner includes some beautiful ideas to help you celebrate. As always, the dinner ideas below begin on Monday to help you plan ahead with ease.

Here’s your dinner planner for the week:

Meatless Monday: Vegan Mushroom Bolognese + frozen peas for protein served over your favorite pasta or spaghetti squash topped with parmesan cheese

Tuesday: Sheet Pan Chicken with Artichokes, Zucchini and Cherry Tomatoes served over cauli-rice

Wednesday: Zippy Arugula Pasta Salad with Pepperoncini Dressing + choice of proteinย 

Thursday: Chicken and Leek Risotto with Olives from Parsley & Parm + roasted asparagus (for more veggies) 

Friday: DIY Pizza Night, using my Pizza Dough Recipe, Cauliflower crust pizza recipe, or buy premade to make it easier (your local pizzeria probably sells dough)! I get a lot of inspo from pizza restaurants or just what I have in the fridge!

Saturday brunch: Healthier Chocolate-Hazelnut French Toast Casserole

Sunday: Roasted Fish with Chermoula, Moroccan Roasted Carrots with Orange, and/or, Whole Roasted Cauliflower with Tahini Sauce, Raisins, Hazelnuts and Green Herbs
