Meatless Monday: Asada Mushroom Tacos, Creamy Black Bean Soup, Blistered Shishito Peppers

Tuesday: sautรฉed shrimp + Spring Green Pasta with Asparagus and Peasย 

Wednesday: Hot Honey Chickpea Bowls from Jar of Lemons

Thursday: Zucchini-leek soup from my cookbook, Quicker Than Quick + turkey and zucchini burgers (served in pita with all the fixings or over a simple salad)

Friday: Roasted Sumac Salmon, Roasted carrots with garlic yogurt, cauliflower rice or steamed rice

Saturday brunch: Cherry cacao aรงaรญ bowl

Sunday: chicken and veggie fajitas (mushrooms, zucchini, bell peppers, and/or onions), guacamole (using this recipe) Fajitas recipe calls for chicken, but you can sub in skirt steak or hanger steak.
