Happy weekend and happy summer solstice! Friday, June 20 marks/marked the longest day of the year – a seasonal pivot celebrated in traditions like Ayurveda and Traditional Chinese Medicine. It’s a time of peak energy, vibrant growth, and warmth – but also a reminder to seek balance. That might look like hydrating foods, slower evenings, barefoot dinners outside, and space for joy and ease.

Meatless Monday: Sweet Potato Couscous Sunshine Bowls from Delish 

Tuesday: Easy Pasta al Limone with grilled shrimp and a simple green side salad with everyday salad dressing #1

Wednesday: Grilled Fish Tacos, Jicama Slaw, Mexican Black Beans

Thursday: Mediterranean turkey and zucchini burgers + Grilled Vegetables with Lemon-Basil Dressing

Friday: Summer Orzo Salad with flank steak (or choice of protein)

Saturday brunch: Savory Muffins with Spinach, Roasted Peppers and Feta 

Sunday: Rainbow Carrot Salad with Millet and Yogurt Dressing served with grilled or simple roasted chicken

    I love your dinner planners SO much! They’ve changed my weeks for me as a working mom – I still get to feed my family healthy delicious meals without having to take the extra time to think about what to make. Whenever possible, the “make ahead” sections are always extremely helpful!
