I just got back from a fabulous trip to Charleston with my mom, sister, and daughter โ€” such a special time together! We soaked up the charm, history, and incredible food of the city. Here’s your dinner planner for the week:

Meatless Monday: Vegetarian larb p. 283 from QTQ, served with lettuce leaves or black rice or both!

Tuesday: Chipotle Lime Salmon Tacos with Corn Avocado Peach Salsa & Cilantro Yogurt Sauce from Ambitious Kitchen + simple roasted sweet potato wedges or sprinkle with garlic powder, smoked paprika, salt and pepper and olive oil before roasting

Wednesday: Easy Tex-Mex Meatballs + Mexican Chopped Salad

Thursday: Mediterranean Skillet Chicken and Rice + Grilled Blooming Onions

Friday: Thai (Grass-fed) Steak Salad (or with Chicken)

Saturday brunch: Berry Bircher Muesli 

Sunday: tuna patties, salt and vinegar potatoes, Grilled Caesar-ish Romaine Salads
