I hope you had an enjoyable week, whether you had one day off or turned this into a longer holiday. We were in Park City, Utah with one of my sisters and her family and we had a great time. There is so much to do there in the summer and I absolutely love being out in nature. It’s wonderful family time because everyone is disconnected from devices (at least in the outdoors!) Here’s your dinner planner for the week:
Meatless Monday: Parmesan Baked tofu with Burst Cherry Tomatoes, corn and edamame succotash
Tuesday: Greek Shrimp with Tomatoes and Feta, cooked rice, grilled vegetables (zucchini, peppers and eggplant are my summer go-to’s)
Wednesday: The Perfect Summer Salad from Leanne Citrone, easy simple protein like grilled chicken paillard or grilled lamb chops
Thursday: Taco Bowl night: for the plant-based folks – Raw Tacos, refried beans, riced veggies (you can follow the steps for cauliflower rice here, but lots of vegetables work such as broccoli, zucchini, carrots and cabbage), guacamole For the non plant-based, slow cooker chicken tacos are great because you don’t have to turn on the oven.
Friday: salmorejo and tortilla “pizza” (place a tortilla on a baking sheet and top like a pizza with or without cheese or use vegan soft cheese, bake at 400 until warmed through.) I like Siete Foods grain-free chickpea tortillas or Food For Life sprouted grain tortillas.
Saturday brunch: lemon-ricotta blueberry soufflé
Sunday: Seared Salmon with Summer Vegetables from the Union Square Cafe Cookbook
Here’s your dinner planner for the week:
Sunday:
Make parmesan mix for tofu
Cook rice
Make salad dressing
Wash lettuce leaves for raw tacos
Tuesday:
Rice vegetables
Wednesday:
Make refried beans
Thursday:
Make salmorejo so it has time to chill overnight
Friday:
Wash blueberries
