I am enjoying a three-day weekend in Palm Desert for the President’s Day holiday!  It’s lovely to spend some quality time with some friends and take a break from the kitchen for a short bit.  But that doesn’t mean I am not planning my meals for the week.  Since it is Lent, I will try to remember to plan for a non-meat or fish dinner on Fridays.  If I forget, just move things around on your own so that the meal plan works for you. Here’s my dinner planner for the week: 

Meatless Monday: Cauliflower Rice Kimchi Bowls from Love & Lemons

Tuesday:  Orange and rosemary glazed chicken, sautéed mixed veggies (I start with olive oil, sliced garlic and a pinch of crushed red pepper, then I add quick-cooking veggies and salt and pepper to taste.  I saute whatever needs to get used up in the fridge.)

Wednesday: Curried Turkey and Vegetable Stir Fry from Quicker than Quick served with steamed rice

Thursday: Pasta alla Vodka – I usually use a smaller amount of pasta supplemented with lots of cooked, seasonal vegetables (e.g. asparagus, carrots, peas, mushrooms.) You can also use a protein pasta like chickpea or lentil. Plus baked chicken cutlets.

Friday: Spetses Braised Cod, herby rice (in my newsletter 2/19), fresh green salad if you need more veggies

Saturday Brunch: Full-fat or dairy-free yogurt topped with my Crunchy Chickpea Trail Mix and diced mango. Feel free to replace the yogurt base with oatmeal.

Sunday: Spinach Risotto and sautéed shrimp, roasted asparagus
