My son (aka Mr. Picky) has been away for 4 weeks and I am going to pick him up this week. ย I cannot WAIT to see him!! ย I miss him and all his pickiness so much. ย I will not be following this dinner planner since I’ll be traveling, but I am starting to plan for the week I spend with my parents and my sisters and their families. ย I am very glad that I started taking notes the last few visits so I can remind myself what meals were great and which ones don’t need to be repeated. ย So excited!! ย Here’s your dinner planner for the week:

Meatless Monday: Charlie Birdโ€™s Farro Salad

Tuesday:ย Chipotle Shrimp Tacos with Pineapple Slaw fromย my book

Wednesday:ย ย Roasted Cauliflower and Almond Herb Sauceย over pasta of choice, basic tomato salad

Thursday:ย Asian Turkey Lettuce Cups, (+ roasted sweet potato wedges if you need more)

Friday:ย California Greek Salad with served with grilled chicken, using this methodย (make extra for Saturday lunch)

Saturday Lunch:ย ย Middle Eastern Rice Saladย using leftover Grilled Chicken

Sunday:ย Roasted Salmon using this method with side of roasted broccoli and lemon using this method

 

Here’s what you can do ahead if you need to:

Sunday

Make farro

Make all dressings

Make all sauces

Dice pineapple

Make spice mixture for tacos

Slice cabbage

Wednesday

Cook rice

Wash lettuce
