Thank you for all the well wishes and gracious comments onย my last post. ย I am really excited to be working on this cookbook, although I will have a super busy summer. ย I have a great team in place to help me shootย the recipes for the book this week. ย We actually just started and I will likely not be cooking much this week since we eat whatever I’ve made on the set. ย But I will never forget that you are still looking for inspiration for your meal plans this week! ย Here are some lovely recipes to help you out:

Monday: Roasted vegetable lasagna, green salad

Tuesday: Green goddess salad with grilled fish

Wednesday: Gazpacho with avocado, corn and zucchini frittata

Thursday: Risotto-stuffed tomatoes,ย grilled chicken paillard with arugula

Friday:ย Corn and Edamame Succotash with turkey bacon

Saturday lunch:ย California nicoise salad

Sunday: NY Times grilled skirt steak with herbs, green salad with homemade ranch dressing, tomatoes, cucumbers, fresh corn and avocado

 

Here’s what you can do ahead of time if you like:

Sunday

Roast vegetables for lasagna

Make green goddess dressing

Tuesday

Make gazpacho and refrigerate

Prep corn and zucchini for frittata

Friday

Hard-boil eggs for nicoise salad

Make herb paste for skirt steak and marinate overnight, if desired

Make ranch dressing
