Ciao from Italy! I am on a multi-generational trip with my mother, sisters, their families and my family! So far, so good! I have already eaten my weight in pasta, pizza and gelato. Meatless Monday: Panzanella with chickpeas, tomato vinaigrette and parmesan croutons (this is a light meal which contains protein, but if you need more, you can add additional food like the zucchini-leek soup from QTQ or a snack board with olives, cheese and nuts.
Tuesday: Caramelized Summer Squash Chicken Skillet with Orzo from Ragan Wallake Kitchenette
Wednesday: Grilled fish tacos or chipotle cauliflower tacos, Mexican corn off the cob, cilantro-lime slaw
Thursday: Mediterranean turkey and zucchini burgers + Roasted Cherry Tomato and Feta Salad
Friday: Seared scallops from QTQ + Fried Zucchini Blossoms and a tomato basil salad
Saturday Brunch: Green shakshuka with fresh bread, fresh fruit
Sunday: Sheet pan chicken with a side of fresh greens tossed with my Everyday salad dressing
