I figure you might need a dinner planner more than ever right now! Many people I have talked to are limiting travel, going out to restaurants and events with large numbers of people. Let’s cook at home!
For my online cooking class students, I am going live on our private FB page tomorrow (Saturday) at 9:45 am PST and I promise to discuss boosting your immune system, among other hot topics!
Here’s your dinner planner for the week:
Meatless Monday: Spring green minestrone, hen of the woods mushroom toast Either of these is great with a fried or soft boiled egg.
Tuesday: Mexican lasagne, jicama slaw (if you want to add animal protein to the lasagne, make slow cooker chicken tacos and add that or just saute some ground beef or turkey and add. The protein just needs to be cooked before adding in.)
Wednesday: Turkey and pinto bean sloppy joes, grated carrot salad
Thursday: Turmeric rice bowls (I’m going to use quinoa or millet) – use this as a template recipe and use what you have on hand.
Friday: Shrimp and basil stir fry, rice or cauliflower rice, Asian green salad with avocado and oranges (p. 165) from my book
Saturday Brunch: Cucumber-hummus turkey roll ups
Sunday: Oven baked giant beans with tomatoes, dill and feta, greek pasta salad (this might be overkill, but it’s awesome as leftovers for the next day for lunch)
Here’s what you can do ahead if you need to:
Wash and dry all herbs and vegetables
Make salad dressings
Make lasagne sauce or use a good quality red enchilada sauce
Make tahini drizzle
Make shrimp marinade
Saturday:
Soak giant beans
