Here’s your dinner planner for the week:
Meatless Monday: White Bean and Farro Salad from Real Simple
Tuesday: Turkey meatballs , an alternative pasta like lentil, Green Detox Salad
Wednesday: Deconstructed Salmon Sushi Bowls (you can grill the salmon if you prefer.)
Thursday: Pea and Mushroom Sauté with Mint, beef kebabs (I’m using this souvlaki recipe.)
Friday: Chicken Enchilada Rojas With Homemade Enchilada Sauce (You can also make this with mostly roasted or grilled vegetables.)
Saturday Lunch: Quinoa Salad with Cherries, Almonds, Celery, and Pecorino from my cookbook with Strawberry Yerba Mate Popsicles.
Sunday: Shrimp with Tomatoes White Beans and Spinach, rice or garlic toast
Here’s what you can do ahead if you need to:

Make farro
Make all dressings
Make the Turkey Meatball sauce
Make sushi bowl sauce
Shred red cabbage and carrot for Detox Salad
Make Strawberry Yerba Mate Popsicles
Tuesday
Cut mushrooms for Pea and Mushroom Sauté
Make Enchilada Sauce
Make quinoa for Quinoa Salad
Wednesday
Marinate meat
