I am back from visiting my mom and she really recuperated incredibly well after her procedure. I had a lovely time on Long Island (the weather after the epic rainstorm was perfection) and I even got to visit Anna in Jersey City, her new home!  I have a lot to catch up on and I am also getting ready for a big trip next Friday to Paris. I’ll be visiting friends for a couple days and then I was lucky enough to be invited by Staub to go to their factory outside of the city.  Some people like to go to Paris to shop and see the Eiffel Tower.  My dream is to go to the Staub factory!!  You’ll have to follow on Instagram to come along with me! Here’s your dinner planner for the week:

Meatless Monday: Mushroom veggie chili (we’re good with just this for dinner, but here’s a great recipe for cornbread if you need more)

Taco (bowl) Tuesday: Ground Turkey Taco Bowl from Dr. Davinah’s Eats – make this with cauliflower rice or brown rice!

Wednesday: One Pot Mediterranean Quinoa, can be served with a side of garlic broccoli or a pizza quesadilla or some grilled seafood, depending on what you have on hand or how much you like to eat.

Thursday: Shrimp with tomatoes, white beans and spinach (we love this with rice or garlic bread)

Friday: Grilled Marinated Flank Steak with Herbed Hasselback Sweet Potatoes and a green side salad

Saturday Brunch: Bruschetta Crostini with Cottage Cheese Dip from Profusion Curry – you know how much I have been loving cottage cheese, and what better way to say goodbye to tomato season than with an easy, delicious, high protein bruschetta brunch. 

Sunday: Grilled lemon-herb chicken with mint drizzle (lamb chops would also be delicious with this mint drizzle) with Roasted Asparagus with Garlic, Lemon, Pine Nuts and Parmigiano-Reggiano, add roasted potatoes if you need more.

Here’s what you can do in advance if it helps you: 

Sunday:

Prep chili ingredients or the entire stew to reheat on Monday

Prep cauli rice if using

Make all seasoning blends

Quinoa can be made ahead and reheated or just make fresh the day of – it’s so easy!

Make any salad dressings

Wednesday:

Cook white beans (or buy canned)

Make steak marinade (marinate Thursday night or Friday morning)
