I’ve always thought of Memorial Day weekend as the unofficial pre-game to summer— it’s when I start entertaining more, eating outside, and leaning into fresher, simpler meals. This week’s dinner planner reflects that vibe: easy, vibrant dishes like lentils with burrata, pasta with zucchini, and slow-roasted salmon with mango-cucumber salsa. I even added a fun Sunday Thai Crunch Salad and my copycat homemade Nutter Butter cookies to help you ease into the long weekend. Here’s your dinner planner for the week:

Meatless Monday: Lentils with Burrata and Breadcrumbs from What’s Gaby Cooking, roasted chickpeas (toss them in olive oil and smoked paprika),  Grilled Carrots with Tahini Sauce 

Tuesday: Pasta with Melted Zucchini Sauce + seared scallops from Quicker Than Quick

Wednesday: Slow Roasted Wild Salmon with Mango-Cucumber Salsa, Collard Greens Salad with Lemon-Parmesan Dressing, roasted sweet potatoes (dice them into bite size pieces, toss in oil, salt, pepper, and paprika and cook for 35 minutes at 400) 

Thursday: Creamy tomato soup from QTQ, avocado toast, simple green salad with Everyday Salad Dressing #2

Friday: Chicken Kabobs with Green Goddess Tzatziki, grilled naan bread, rice, and mixed grilled vegetables 

Saturday brunch: Simple Chia Seed Porridge topped with fresh fruit 

Sunday: Thai Crunch Salad with roasted chicken + Copycat Homemade Nutter Butter Cookies
