Happy weekend! I just filmed my newest monthly class and it will be uploaded next week. The entire class is about grilling – proteins, vegetables, starches, dessert! Here’s your dinner planner for the week:
Meatless Monday: Tortilla soup, served with sweet potato nachos with vegan queso if you need more.
Tuesday: Sheet pan citrus-chili cod with fennel p. 248 from QTQ, add some roasted potatoes if you need more
Wednesday: Bell pepper and beef taco skillet from Feed me Phoebe (thinly slice your bell peppers if you don’t have a spiralizer) black beans and cauli-rice (I have lots of go-to swaps for ground beef like cooked lentils, soaked TVP, mushrooms pulsed in a food processor, crumbled tempeh, and more.)
Thursday: vegetarian chopped antipasto salad served with roasted chicken (pick up a rotisserie chicken to keep easy) or your choice of protein (you don’t really need any more protein since the salad has chickpeas and parmesan); store-bought pizza dough for a quick pizza (Banza makes a good frozen chickpea flour crust for a last-minute easy pizza.)
Friday: arugula and farro salad with peaches served with grilled shrimp
Saturday brunch: corn cakes
Sunday: Grilled lemon-herb chicken with mint drizzle, carrot salad with avocado
Here’s what you can do ahead if it helps you:
Sunday:
Make stock
Make queso
Slice sweet potatoes
Make salad dressing
Wash greens
Cut vegetables for chili cod recipe
Tuesday:
Cut onion and peppers
Cook beans (black beans & chickpeas) if making from scratch
Wednesday:
Cook farro
Friday:
Make corn cake batter
Saturday:
Marinate chicken
